This Handbag Birthday Cake can be frozen for up to one month. Thaw at room temperature for about six hours. We used tweezers to position cachous. The birthday cake can be completed on day ahead by keeping it in the refrigerator if the weather is hot.

Birthday Cake Recipe

  • 3x340g packets buttermake mix
  • 38cm square prepared board
  • 2 quantities butter cream
  • pink food colouring

Decorations

  • 28cm black licorice strap
  • 2 square red jubes, halved horizontally
  • silver and pink cachous
  • 5 large pink and black licorice allsorts, halved.
  1. Preheat oven to 180 C / 160 C fan-forced. Grease and line deep 24cmx35cm baking dish.
  2. Make cakes according to directions on packets, pour into dish: bake about 1 hour. Stand cake 20 minutes before turning, top-side up, onto wire rack to cool.
  3. Using serrated knife, level cake top. Turn cake cut-side down. Using paper pattern provided here, cut handbag and handle pieces from cake. Place handbag on prepared board, cut-side down, leaving space for handle.
  4. Using skewer, mark inner section of handbag onto cake
  5. Tint a quarter of the butter cream dark pink, tint remaining butter cream pale pink. Use to decorate cake, as pictured
  6. Spread handle pieces of cake with pale pink butter cream, position handle and smooth joins
  7. Cut licorice trap into thin strips, position on cake, as pictured.
  8. Position silver cachous and jubes, cut-sides up, on cake for clasp
  9. Mark out the name of the birthday girl with pink cachous
  10. Decorate handle with all-sorts
